There are so many ways to use the sweet potato, but have you ever thought to use them for breakfast? First up, sweet potato toast.
My version: I cut a thicker slice so I had to put it through the toaster a few times, but this can also be done in the oven on a baking sheet. Smothered with peanut butter and topped with banana slices and sprinkled with cinnamon
If you only used half of your sweet potato for toast, then cut the rest of it into small chunks and steam or boil them. Mash the now soft vegetable and save in the fridge for tomorrow breakfast.
