The vaccination train keeps rolling here in the Battlefords. If you’re 48-54 the drive thru is open with no appointment necessary. As I wait for my needle time, like everyone else, I’m dealing with restrictions on family bubbles and all that. The seasons have changed so something I’m looking forward to is cook-outs! Steaks, ribs, burgers, hot dogs, whatever it is, cook it over fire and it becomes an event.
Along with every cook-out comes a variety of other tasty stuff. Garlic Bread, Corn on the Cob, fire grilled asparagus, and of course salads.
I love that when you eat outside salad is transformed from leafy green stuff, to hearty pasta or potatoes loaded with creamy dressing, often snazzed up with ham, cheese, pickles, bacon, or boiled eggs. Every “summer” salad is like a meal on it’s own.
I think “salads” like this were invented by mothers-in-law that had no confidence in the newly married couple’s ability to prepare food. It was a sneaky way to bring a four course meal in disguise! And for this I am thankful. When moms make it the only way to prepare these dishes is to make enough to feed an army, eh! Ever notice that the recipe calls for 12 cups of elbow macaroni, or 10 pounds of potatoes – and that’s just to start! You know you are in for a treat when someone breaks out that GIANT Yellow Tupperware bowl.
Here is the real question though… when it comes to the “summer cook-out salads” which one is better – when your mother in law peels that burp-sealed translucent top off the Tupperware bowl and you see what’s inside, which one makes your heart beat – Potato Salad or Pasta Salad?
